The original sentence seems grammatically correct and sound.
one of the... agrees to is
and the being in C is redundant.
Hence A

However i am bit confused about the use singular or plural verb: is vs are
I think it should be plural because it should agree with plural nouns:languages

I think its A.
Though Himalaya argument is similar to what Paul explains about "restrictice clause". I think in this sentence, it is clear that the sentence is talking about Icelandic and hence singlular.
Furthermore, D does not sound correct -- "can lengthen in English translation" is not same as "...when the language is translated in English".

Original sentence is fine.
subjet here is Icelandic not the languages... so it requires a singular subject verb agreement.
therefore B and D is out.
C is out because the use of being is awkward
In E, the use of it is unneccessary.
So A is the correct answer choice.

You can cancel B and D immediately since they include "are" which is incorrect since the verb must refer to Icelandic which must be singular.
C is also wrong because of the "being translated". I would lean towards A since it omits the akward "it is written"
