If you have an opportunity to interview with an adcom member, I would grab it, but realize that standing at a booth in a crowded all with others milling around is not an interview; it's a chat. If you can schedule a real interview and have prepared well for it (know what you want to do after your MBA and why you want to attend the given school, have prepared examples of leadership and teamwork,) do so.
