Lets ellimniate each choice one by one. A and B uses the passive voice, besides A is awkward. eliminate A and B. C fails the modification test because it means that good eating habits are the ones that desire so eliminate C.
D and E are the only contestants here but D fails because it starts with because. I was told in my early school days never to start a sentence with because. E wins

I think E has the problem with 'they' - 'habits' or 'dancers and gymnasts'

I think it is E in ETS's World. Unless "Because" is wrong, there is nothing wrong with D. I think it is very obvous that they referes to the people, not [eating] habits.

Do you mean that because as an introduction for a clause is rarely correct on ets point of view? I first picked D here as "they" in E don't sound crystal clear...
What is the OA ?

Answer should be D
E has ambiguous referent for "they"
A illogically says that "the desire to be as thin as possible" causes "a failure to maintain good eating habits"
Because can start a sentence as long as it is clear that it is subordinated to some other independent clause. Read on this link:
