All of us/we --- ‘us and we’ are pronouns and objects of the preposition of’
The rule here is that a pronoun will only take the object case such as me, us, him, her and them
So all of us – not all of ‘we’

Some more examples

Most of us (not most of we) are at odds with the reasoning ofsome of the GMAT SC concepts.

Some of us (not some of we) do not bother about how many shots we take at GMAT
