Because 'like' is more idiomatic than 'as'.

I think "A"

The comparison is made between "the way fruits respire" and "the way humans breathe" not the "respiration" and "breathing"

The reason why I choose E instead of A is because it softens the comparison. Obviously fruit doesn't breath just like a person does, rather a subtle exchange of gas occurs for a given period of time.

- if i break parse this sentence, i am comparing respire to the way human beings breathe (respire -> breathe)

(B) similarly to human beings who are breathing
- incorrect comparison

(C) just like the breathing of human beings
- we are not comparing the breathing of human beings, but how human beings breathe

(D) as human beings when breathing
- awkward phrasing

(E) just as human beings do when they breathe
- close second, this sentence sounds a bit awkward, though

Eek, this sentence makes me think that I am eating fruit when it is still alive!!

I keep toggling between A and E, but I think that <b>A</b> is my final answer.

Its a clear E IMO!!

Why not A -

We need to look at the phrases in the overall context of the sentence. When we say we are comapring "the way fruits respire" with "the way humans breathe", we are not considering the first phrase of the sentence which says - "Although fruit can no longer grow once it is picked"
If you look in this context, it becomes clear that the sentence is not comparing "the way fruits respire" with "the way humans breathe".

Rather, it is comparing the process of breathing whereby both humans and plants take in oxygen and give off carbon dioxide.

Im waiting for the OA for this one for sure!!
