B. and animal carcasses is rare.awkward and distorted meaning

C. with animal carcasses as rare.unidiomatic

D. animal carcasses a rarity.missing a conjunction or a preposition

E. with animal carcasses a rarity.CORRECT.Idiomatic. Correct usage of 'with' to show the contrast warranted by 'despite'

There is a similar question in OG 11, just talking about Greeks.
Try to disregard the list of things bear eats, and then you will have:

Despite being a carnivore, the diet of the bear is largely vegetarian ...

A - and animal carcasses rarely; doesnt make sense - and is wrong, should use with; largely and rarely should not be parallel
B- and animal carcasses is rare - again and is wrong, this sounds like carcasses is in limited supply.
C- with animal carcasses as rare. - sounds like rare acts like something in the diet
D- carcasses cant be part of this list
E- with is used correctly and makes sense.

bsv180985, my thought on missing 'a' is due to entire class of beer as a carnivore...!

what is the source of this question? there is a mistake in the non-underlined part

Why 'as ' ?? That would make ' rarity ' an object to eat For eg. "'.........eggs, carrot and animal carcass as dessert''
