If you have covered your work and professional accomplishments well in the other essays, then you can certainly cover the personal challenges and triumphs of taking care of your mom during her illness in an essay. This is one way to demonstrate your humanity and capacity to care for and about others. However, if you have not adequately covered your work or non-professional impacts in the other essays, you will need to juggle the topics (perhaps eliminating the story of your grandfather?) to leave room for these important subjects.
