Excluding one recommender after interview invitation

I got an interview invite from McDonough which I will be going to on the 6th. I only provided one professional recommendation as well as a college instructor recommendation when I applied but I noted in my optional essay that I would provide another professional reference later. I've applied to Kelley and Goizueta since then but my recommender has informed me at the last moment that he only has time to write 3 recommendations for me right now and that I'd have to wait until next month for others. So in total, he still needs to submit his reco to Yale (they requested by 25th, he will submit tonight), Kelley, Goizueta and McDonough, which is 4 schools. I don't really have anyone else I could use other than my college instructor. (Goizueta and McDonough clearly prefer professional recommenders, Kelley doesn't explicitly state preference) I'm a bit confused what I should do...
- Hold back the Kelley application for Rd 3 (of 4), giving him time to write
- Tell him not to write for McDonough right now and focus on the other three (but I'm not sure how this will affect my admission post-interview... and McDonough is my safety school)
- Ask my instructor to write a Kelley recommendation and hope that's good enough to at least get me an interview
I know Kelley and McDonough aren't particularly difficult schools to get into but with Stern and Johnson being very quiet about my November applications I'm beginning to set my sights lower and it'd be a disaster if I didn't get into at least one of Kelley, Goizueta or McDonough. Do recommendations matter that much after you get an interview invite? (McDonough has a pretty high admit rate) Or will my interview matter more after that point? Thanks.
