I am not very confident on this

I believe choice E introduces split infinitive( which is strongly discouraged in standard American English ) Most of the times split infinitive does not distort the meaning. The meaning becomes more clear if the setence is rearranged.

Without rearrangement the sentence would look as follows

For members of the seventeenth-century Ashanti nation in Africa, animal-hide shields with wooden frames were essential(verb) items of military equipment, to(infinitive) protect warriors against enemy arrows and spears.

Here the infinitive should be next to the verb as follows
... + were essential to protect + ....

The above sentence can be rearranged as
to protect warriors agianst enemy arrows and spears, animal shields with wooden frames were essesntial for the members of the seventeenth-century Shanti nation in Africa.

C is better because it fits well as it is in the given sentence, modifying the animal hide shields.

For members of the seventeenth-century Ashanti nation in Africa, animal-hide shields with wooden frames were essential items of military equipment, a method to protect warriors against enemy arrows and spears.

Notice that the sentence begins with a prepositional phrase modifying noun clause "Animal Hide shields with wooden frames ". So any verb that describes the action must fit with the prepositional phrase as well.

i.e. for ....(), animal ...() , ???

here for protecting suites the best.

(A) a method to protect

--> this reads for a a method to protect

(B) as a method protecting

--> reads for a method protecting
(C) protecting

--- > For protecting sounds right
(D) as a protection of
---> for as a protection of sounds wordy and wrong
(E) to protect

--> for to protect sounds wrong
