You would be surprised what interviewers are asked on the forms. I can assure you they are looking at everything about you. You may not put your GMAT down to prove you are capable of handling the work load but if you did exceptionally well by all means put it on your resume if you can fit it.

I had it on my resume for an interview yesterday, and I wasn't thrown out of the building. However, for a couple more next week, I might change it.

Having your GMAT on your resume might not help but it certainly won't hurt you (if the GMAT score is good). Of course I am talking about somebody who is applying to a b-school or applying for a job while at school. If you have been in the workforce for 3+ years, your SAT, GMAT, GPA, academic honors etc. are pretty much irrelevant.
