Thank you for your post. A lot is missing in your profile description, so it's difficult to guide you. However, as it relates to your university selection, you can reference
this article. It will help you narrow down your list.
As far as your profile, you should have a strong GPA and equally strong GMAT (if targetting top universities, of course). While you have an atypical professional background, you belong to an overrepresented body of candidates, so you need to be competitive within your demographic. Because you are an Assistant Professor, you should also show leadership in one form or another. A component you will need to articulate is your purpose for pursuing an MBA.
