A is just fine.
Rest all are either possesive forms or have misplaced modifiers.

In such works as his 1889 masterpiece, A Dash for the Timber, Frederic Remington caught the publicâ€™s fancy by portraying those moments of conflict that defined the Westâ€™s romantic heroes.
(A) In such works as his 1889 masterpiece, A Dash for the Timber, Frederic Remington caught the publicâ€™s fancy

modifier modifying the correct subject.

(B) In such works as Frederic Remingtonâ€™s 1889 masterpiece, A Dash for the Timber, the publicâ€™s fancy was caught
- out seems to indicate that public's fancy did such works

(C) Frederic Remington, catching the publicâ€™s fancy in such works as the 1889 masterpiece A Dash for the Timber, did it
- out, weirdest amoung all, lot of problems. missing commas for appositives, did it ....
