I recommend asking questions that demonstrate your knowledge of the school rather than your lack of knowledge. Adcoms are also marketing reps for the school so they do have knowledge of the program that cannot be found on the school's web site. Ask him or her questiions involving recent changes that (a) cannot be answered by cruising their web site and (b) are not too fine-grained (e.g., "what books does Prof. X assign?"). So if there's a new dean ask the adcom what impact if any he or she will have on the shape of the class or if there's a new curriculum ask how it is being received and is there more to come--these kinds of 'recent developments' questions. Don't ask about the admissions process itself, but if you are interested in being involved in the admissions process as a student maybe ask what opportunities are available for students.
