Why too ambitious? Maybe your GMAT is a bit on the low side, but you can certainly take your shot (you should be applying to other schools too if your objective is to for sure go to BSchool next year, though).

As for your question regarding "should you change everything in the essays".. I'm not really sure what you meant.. change from what to what?? why??? change what?? please clarify and I'll do my best to help out....
