I'm think about listing the math courses that I took on undergrad and grad, briefly discussing my MSc dissertation thesis (mathematical model for an asset pricing) and mentioning the math nature of my daily work (Business Intelligence). Or is it a better idea to just leave by the Adcoms to figure those things out?

720 is an excellent score! Don't create some problems where there are none. And I think it is even a bad idea to address what you call your weakness in the additional essay. It is self delivering "I am guilty", even if not charged. Did anybody tell you that a 44 score on Quant necessarily means you have poor Math skills?
Instead, be proud of your score and your assets, I am quite sure you have at least a few.
