My gut feeling is that this sentence tests parallelism.
Here we go:

Quote:
The caterpillar of the geometrid moth strikes when special tactile hairs on its body are disturbed, after capturing its prey, holds the victim so that it cannot escape.


This sentence presents a few facts about the caterpillar (of the geometrid moth)
It does below actions:
  • strikes when special tactile hairs on its body are disturbed (when correctly refers to the time frame when
    the action (strikes) is performed)
  • after capturing its prey, it holds the victim so that it cannot escape.


Quote:
(A) strikes when special tactile hairs on its body are disturbed,

As vanam52923 sugggested two main verbs in the sentence must be separated by and.

I love to sing and dance. correct
I love to sing, dance incorrect.

(B) striking when special tactile hairs on its body are disturbed, but

the coma+verb-ing modifier is incorrectly used here. We do not need a HOW / RESULT of preceding clause here.
Rather we need a main verb = strikes.
There is no contrast in the sentence. The usage of but is incorrect.

(C) which strikes when special tactile hairs on its body are disturbed,

(D) which, striking when special tactile hairs on its body are disturbed,


which is a noun modifier which refers to preceding noun.
Here we are not talking about a specific type of caterpillar.

the usage of and correctly connects two main verb: strikes and holds.
capturing is verb-ing modifier denoting an action here.

GMAT really is pain in the ...
In one of the OGs , it says "hairs" is wrong and now here "hairs " is used. COMMMMOOOOONNNN !!!

My comments are in blue text.

• Choice A is incorrect because it provides no word or construction that can form a grammatical link with the remainder of the sentence.

• By substituting striking for strikes, choice B removes the verb form that functions with caterpillar, the grammatical subject, to make a complete sentence.
Rewrite: Choice B substitutes striking for strikes. Striking is a participle, not a verb. The subject caterpillar has no verb. The sentence is incomplete.

• C is awkward and also ambiguous because it is not immediately clear whether which is meant to refer to caterpillar or moth.

• In D, which is again ambiguous, and with striking in place of strikes, which takes holds as its verb, leaving no verb for the subject of the sentence.

• Choice E is best: and links the verbs strikes and holds to form a compound verb (my emphasis) for the subject caterpillar.

This OE is good.
Let me know if you do not understand the explanation of option A.
