GMAC has publicly stated that the Official Score that you earn on Test Day is within +/- 30 points of actual ability. Assuming a similar 'swing' in how your CATs function, most of your CAT score results - along with your Official Score - show that you essentially performed the same each time (about 580 +/- a few points). You handle certain aspects of the GMAT consistently well, but you also make certain consistent mistakes.
While it's possible that you had a bit of a 'bad day' when you took the Official GMAT, it's also possible that you got a bit 'lucky' on your better CAT performances. Thanks for your answer. I currently do daily mock test and I reached between 640 and 700 again... So now I see better results at least. I hope
Regarding your questions:
1) the application deadline is the 31st of May 2021. The next round would be available in one year. But this is too late for me so no or never ... The date of my second GMAT ist 18th of may. So yeah I guess its not that much to improve in two days
2) I need 600 to apply, and 640+ for a realistic chance to get accepted
