Honestly I think you do have a shot at these top Euro programs.
What these Euro programs look for moreso than their US counterparts isn't necessarily "finance" or "consulting" types, but applicants who have international experience, which you do. You work for a Chinese company in Greece. You work with people from all over the world. You did your masters in Sweden.
While there are tons of students at INSEAD, LBS, IMD and Oxbridge with experience in financial services or consulting, the reason why is because there's tons of these people applying to these schools in the first place - lots of Euros working in the major financial/business centers in Europe and finance/consulting is a huge part of the economy in any of these cities (London, Paris, Zurich, Frankfurt). So it's a function of volume more than bias.
In any case, you should at least give them a shot, and maybe apply to other lower ranked Euro programs for safety, like the Spanish schools (IESE, ESADE) or Bocconi. In your case, focus on your international experience - and as an engineer chances are there will be others like you with project management experience - you won't be an odd duck or anything (most engineers applying in fact don't have much managerial experience to begin with).
