2 2/3 - 1 1/4 can be written as (2 + 2/3) - (1 + 1/4), so (2-1) + (2/3 - 1/4) = (1) + (5/12).
Earlier we converted mixed fraction to fractions, so we can do the reverse now i.e.
(1)(5/12)

Your approach is good.
