E implies that the act of "eating" fava beans triggers hemolytic anemia, whereas actually it is the fava beans that trigger hemolytic anemia. Shouldn't B, therefore, be the answer?

E! LOL!
I actually went back and reread E to make sure that the word used is "persons", not "peoples" :)

(E)

(C) is closer but 'If' word changes the meaning. It will be more meaningful if it is presented like 'If they eat..'

I would go with 'E'. Though this is not perfect but this is the best among all.

I guess EATING in its progressive form does not mean just the act of ingesting food but a continuous process...So E is a viable one

(A) Persons, suffering from a deficiency of the blood enzyme G6PD, eat fava beans and discover that they trigger hemolytic anemia. ---'they' is confusing. It can be either persons or beans.
(B) When persons suffering a deficiency of enzyme G6PD, a blood enzyme, eat fava beans, they discover that it triggers hemolytic anemia.
(C) If people suffer deficiencies from the blood enzyme G6PD, they discover that fava beans trigger hemolytic anemia when eaten.

(E) Persons who suffer from a deficiency of the blood enzyme G6PD discover that eating fava beans triggers hemolytic anemia. answer

I agree for E as answer here. But, it couldnt smell anything grammatically foul with C.
I am not sure whether the below logic "not to use when" is absolutely true. Can someone else also confirm this?
How can we correct this?
(C) If people suffer deficiencies from the blood enzyme G6PD, they discover that fava beans trigger hemolytic anemia when eaten.
