Like other educators who prefer to substitute anthologies of short stories or collections of popular essays to dull “basal readers,â€

my take is C

(A) emphasizes how important it is to enjoy... Not exactly sure wrong but I will prefer C to A
(B) importance of enjoy should be enjoying...
(C)
(D) Ms. Burton’s ... not parallel
(E) Ms. Burton’s ... not parallel

I had chosen D, because the correct idiom in my mind would be substitute.........for.....

But, the OA is E.

IMO, E would make sense if it ended with: .....the importance of enjoying

I just checked the 1000 SC and I think the question looks like this...

if you change typo of enjoy to enjoying B is better choice...
