Two very easy decision points to get a correct answer.
First is to add an auxiliary verb to the original sentence and second is the usage of idiom consider X as Y
D) is the correct answer as it adds the correct auxiliary verb "was" and the correct idiom "considered the excessive sentiment in the poems in his first two collections"

Let me try.
Spanish poet Juan Ramón Jiménez, who won the Nobel Prize for Literature in 1956, so embarrassed in his later years by what he considered the excessive sentiment in the poems in his first two collections, he destroyed every copy he could find.

Original sentence lacks verb and therefore is a run-on sentence. (Subject is Spanish poet Juan Ramón Jiménez)
So embarrassed should be followed by that (So embarrassed that...)


A. so embarrassed in his later years by what he considered the excessive sentiment in the poems in his first two collections, he destroyed
B. and was so embarrassed in his later years by what he considered as the excessive sentiment in the poems in his first two collections that he destroyed
first part is not an independent clause so and cannot go here
C. in his later years he was so embarrassed by what he considered as the excessive sentiment in the poems in his first two collections, destroying
he unnecessarily repeats the subject.
D. was so embarrassed in his later years by what he considered the excessive sentiment in the poems in his first two collections that he destroyed
FINE
E. because he was so embarrassed in his later years by what he considered as the excessive sentiment in the poems in his first two collections, destroying
Sentence lacks main clause. Destroying is used incorrectly.

4. SV Agreement with word "was" to be in sequence with tense.

Having gone through the question and your query, we believe we can help resolve your doubt.

Here, the use of "that" is part of the idiomatic construction "so A that B", wherein A is a cause and B is its effect. Here, the cause is that the poet was "embarrassed in his later years by what he considered the excessive sentiment in the poems in his first two collections" and the cause is "he destroyed every copy he could find"; because the poet was embarrassed by something in the poems of his first two collections, he destroyed every copy of them that he could find.
