What have you done to get to know the Stern community, get to know the school better, learn about us?? Basically you gotta go visit before you apply?

Attend a local presentation.

Contact local alumni (do a search)

Reach out to current students if you can (email someone in a club and ask them if they'd be willing to talk to you)

Use these to highlight and substantiate what you've learned though the more boring traditional channels - online, etc.

I was reading the Berkeley essays and they have a very similar questions:

"If you have visited Haas, please let us know what about your visit made the most lasting impression on you. If you have not visited Haas, what steps have you taken to familiarize yourself with our MBA program?"

I guess they are used as backup for Stanford....so its important to show that you are not considering them as backup (both for haas and stern).

I like both NYU and Columbia for finance. I think NYU in its own right however has a stellar MBA Finance and as a matter of fact quite a fine MS Financial Engineering.

You are right, the finance program is stellar. That's where I got my undergrad from. BUT, I think given the choice, most people would choose Columbia over NYU.
