B & E out as they are using singular "surrounds" for fields.
D is out as it is using which for farm workers.
between A & C, 'many of them' is better than 'who'

I'll go with "A"

I believe 'that' can refer to both singular and plural.

In this case we have:

'the patchwork of green fields that'

'Of' is often used as a middleman and can usually be eliminated.

ex. The houses of that rich man contain very expensive furniture.
The houses contain very expensive furniture.

This leaves us with 'the patchwork surrounds' and rules out A, C and D.

Whom at the end of B is incorrect.

That leave me with E.

That leaves us with the question already posted in the old thread

Any general rule?? The reference is always the last noun before that / which??
