A seems best in my opinion.

"not for" should be there in the correct statement. And their is the correct pronoun here.

I'd go with C.
A and D are out because "their" does not properly refer to "storm"
proper idiom is "for X, not Y"
E wrongly introduces a conjunction "and" which does not show contrast in the 2 actions
B does not follow proper idiom with the introduction of "for"
Ex: I'm doing this for Isabella, not Martha --> ok and concise
Ex: I'm doing this for Isabella, not for Martha --> wrong
E is nonetheless staring at me pretty badly

My shot ... A is correct.

The data collected by weather airplanes that fly into the heart of a hurricane are useful mainly for gauging the stormâ€™s structure and strength, not for the speed and the path of their movement.

(A) not for the speed and the path of their movement - "THEIR" correctly refers to DATA (plural). And also satsifies the Idiom, X, not Y.
