B would have been the best choice if it had "of" before "higher" ( The protein in rice is OF higher quality ).

With the choices as is, C is the best.

A for parallelsim

B --> high quality is right..not "higher" quality
D --> lack parallelsim.. its not clear.. "it" --> refers to "RICE PROTEIN" --> that is illogical
E ->comparing protein with Wheat
C -->lacks parallelism

Why does C lack parallelism. Doesn't 'that' refer to protein (in wheat)

Should be A;

As for C, the order of things become:
Rice-protein-protein-wheat ------not advisable
Protein-Rice-protein-wheat--advisable for GMAT, hence A

Well, A also uses "it" which can always be an issue. C doesn't have any grammatical error.

heres an explanation that i found. according to this "rice" has to be the subject. Also, imo,"rice" has to come after comma because the beginning clause is modifying "rice".

"
In comparison, make sure that you compare things that are comparable.
Ex. In addition to having more protein than wheat does, the protein in rice is higher quality that that in wheat,
with more of the amino acids essential to the human diet.
A. the protein in rice is higher quality that that in
B. rice has protein of higher quality than that in
C. the protein in rice is higher in quality than it is in
D. rice protein is higher in quality than it is in
E. rice has a protein higher in quality than

Analysis
We are talking about two things wheat and rice, both of which have protein (but with different quality).
A. C. and D:The subject should be rice since we are comparing bewteen wheat and rice.
E. implies that rice has both protein and wheat in itself. Illogic!
B. does the right thing, saying that protein in rice is better than protein in wheat.
