Nice explanations folks, updated the post with OA and OE.

Unlike Acanthus, whose wedding was sparsely attended being married in a low profile community church, Tom’s was attended by more than seven-hundred guests and his marriage’s location lies in a famous 15th-century Odescalchi Castle in Bracciano, Italy.

(A) being married in a low profile community church, Tom’s was attended by more than seven hundred guests and held in a 15th century Odescalchi Castle which is famous and in Bracciano, Italy.

The subordinate clause “whose funeral was sparsely attended being married in a low profile community church” is grammatically awkward and ambiguous in meaning. Moreover, the sentence makes an illogical comparison between Acanthus and Tom’s wedding. Finally, the phrase “which is famous” is unnecessarily wordy and the construction “famous 15th century Odescalchi Castle “would be more appropriate.

(B) being married in a low profile community church, Tom’s wedding was attended by more than seven hundred guests and his marriage’s location lies in a famous 15th-century Odescalchi Castle in Bracciano, Italy.

Like (A), (B) also contains a grammatically awkward subordinate clause. Second, while the introduction of “wedding” makes the possessive “Tom’s” unambiguous, the sentence still illogically compares “Acanthus” to “Tom’s wedding.” Finally, this choice creates an awkward construction “and his marriage’s location lies…”; this can be clearly stated by “and held in…”

(C) and he was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

“Acanthus” is followed by two clauses, “whose wedding was sparsely attended” and “he was married in a low profile community church.” The second of these clauses is incorrect because it should be a subordinate clause modifying Acanthus, and should therefore start with "who was buried"; second, it should be parallel to the first clause, and should therefore start with "who was buried". Finally, it makes an illogical assertion - “Unlike Acanthus, he “Acanthus” was married….”.

(D) and who was married in a low profile community church, Tom’s wedding was attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

This choice makes an illogical comparison between "Acanthus" and “Tom’s wedding.". This choice corrects the first subordinate clause error by introducing the clause as “who was married…”

(E) and who was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

CORRECT. “Acanthus” is modified by two subordinate clauses, “whose wedding was attended….” and “who was married ….,” each properly introduced by the relative pronouns “whose” and “who” respectively. In addition, “Acanthus” is now logically compared to “Tom.” Moreover, the later part of the underlined portion does not contain any wordiness or ambiguity.

A,B,D are out becoz of wrong comparison of a person to a wedding

Left with C and E

Option E-who was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.-
use relative pronoun in parallel structure and makes clear sense.Correct
option C- and he was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.
The bolded part is written wrongly use of independent clause here is wrong

"Unlike x, y." X and Y must not be disparate. I.e. one cannot compare Acanthus to a wedding.

Quote:
A) being married in a low profile community church, Tom’s was attended by more than seven hundred guests and held in a 15th century Odescalchi Castle which is famous and in Bracciano, Italy.

"Unlike Acanthus, Tom's was" - No.
Quote:
B) being married in a low profile community church, Tom’s wedding was attended by more than seven hundred guests and his marriage’s location lies in a famous 15th-century Odescalchi Castle in Bracciano, Italy.

"Unlike Acanthus, Tom's wedding was" - No.
Quote:
C) and he was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

"Unlike Acanthus, Tom had a wedding" - Yes.
But: "and he was married": No. "he" is shortly preceded by "whose" and such combination is sloppy.
Quote:
D) and who was married in a low profile community church, Tom’s wedding was attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

"Unlike Acanthus, Tom's wedding was" - No.
Quote:
E) and who was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

"Unlike Acanthus, Tom had a wedding" - Yes. Wedding was attended and held - OK. My choice.

The sentence begins with "Unlike Acanthus" so to complete the comparison "Tom" is necessary; eliminate every Acanthus-Tom’s wedding comparison. Out A B and D.
C and E remain:

We can eliminate C because uses "he" to refer to the subject: "Unlike Acanthus, whose wedding was sparsely attended "

C) and he was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

E) and who was married in a low profile community church, Tom had a wedding attended by more than seven hundred guests and held in a famous 15th century Odescalchi Castle in Bracciano, Italy.

A, B, D are out because
- (A): Tom's is not parallel with Acanthus
- (B): Tom's wedding is not parallel with Acanthus.
- (D): same as B.

Narrow down to C and E. The only difference is "he" vs "who"
- (C): Unlike Acanthus, whose wedding..............and he was....................., Tom had a wedding...............
- (E): Unlike Acanthus, whose wedding..............and who was..................., Tom had a wedding...............

E is much better because of parallel structure.

My pick was E.

AB: Wrong because of "being"
D: Tom's wedding is not parallel to Acanthus under the Unlike X Y parallel structure
C: "and he was married" not parallel to "whose wedding".

Splits
1) ABD not parallel to Acanthus under "Unlike XY" structure.
2) ABC element to left of "and" not parallel to "whose wedding"

This problem tests us on COMPARISON
Here "Acanthus" is in non underlined part and is a human. Tom's is in possessive case and is not paralle with Acanthus.
So A, B and D are wrong
Now we are left with C and E
C uses a pronoun He and is ambiguous
Where Who in option E is clearly pointing to Acanthus.
Hence E is the Answer

My technique (not my grammar knowledge):

A and B are out because of being (it is high probability that being answers are wrong. Not always, but most of them). We have C, D and E left. D is comparing Acanthus to Tom's wedding, which is obviously wrong. C - the structure is not parallel:

Achantus:
-whose wedding was sparsely attended
-and he was married in a low profile community church

Better to use who than he. So, E is correct one.

why had after tom is correct? is it because if a sentence uses simple present first them second sentence becomes past prefect?

My credo: one percent wrong is 100 percent wrong at least in GMAT SC. Let's try to solve this topic in the following way.

We know for certain that the comparator 'unlike' indicates that Acanthus should be compared with Tom and not with Tom's any \thing else. Therefore, I am not even going to touch choices A, B, and D with a barge pole.

Between C and E, a basic knowledge of sentence structure will reveal that C is a blatant fragment with the first part being just a noun phrase and unparallel with its counterpart after 'and' which is a clause.

If I were taking GMAT, I would close my eyes and click on E

Disclaimer: be sure that there is at least 1 percent wrong in the rejected choices.
