Simply because A is ackward abd redundant

A pilots should avoid using these because

B their use should be avoided by pilots - passive

C pilots should avoid using it because - same as a

D they should not be used by pilots because of the coating - ackward and coat should be used better as subject

E they should not be used by pilots because the coating on these glasses makes it almost impossible to read the digital instruments inside the aircraft

Plus others stuff but this is sufficient to lead you to the correct answer

Why isn't A the right answer.

A is incorrect because of the usage of "these".
B is incorrect because of the reference issue of "it". Also "their coating make it" should be "their coating makes ....."
C is incorrect because of "it".
ABC are incorrect for one more issue.
The sentence starts with an introduction of a contast. A construction such as "while A happens, B ...." but in ABC its avoided.
D is incorrect because of its awkward question.

B- second "their" is ambiguous.

The question uses placeholder "it" - "make it impossible to do something". <-- Do NOT find antecedent of "it".

(A) pilots should avoid using these because their coating will make it almost impossible to read the digital instruments inside the aircraft
Wrong. "these" is wrong. The correct pronoun is "them".

(B) their use should be avoided by pilots because their coating make it almost impossible to read the digital instruments inside the aircraft
Wrong. Pilots should avoid using the sunglasses, not avoid using sunglasses' use.

(C) pilots should avoid using it because the coating on these glasses makes it almost impossible to read the digital instruments inside the aircraft
Wrong. sunglasses is plural --> "it" is wrong.

(D) they should not be used by pilots because of the coating on these glasses making it almost impossible reading the digital instruments inside the aircraft
Wrong. Grammar problem. "make it impossible TO do something." is correct. "make it impossible doing something" is wrong.

(E) they should not be used by pilots because the coating on these glasses makes it almost impossible to read the digital instruments inside the aircraft
Correct.

A is incorrect because of the word "these", "them" is the correct word to be used here.

One more reason why A is incorrect is that, the pronoun 'their' may refer either to the pilots or to the sunglasses.

Agree A is wrong, but out of curiosity why is 'these' incorrect to reference sunglasses? Is there a different in the required referent for "these" and "them"? Thanks!
