Retake the GMAT, especially if you're confident that you can score 30+ points higher. With a 690, your chances are slim at all the schools you listed.
Even with a 720 or greater, you'll still be a stretch, but at least you have enough of a shot that they're worth applying to. Being in healthcare is an asset, but don't count on it being super unique or anything - there's more than enough folks with healthcare backgrounds applying that you can't just bank on that to get you in - it still comes down to your whole package, which includes your history of leadership/team achievements, your ability to work with people from different backgrounds and cultures, and so forth.
