I tend to think that your “quants” open the door for you, but your essays push you through that door. So, you can set yourself apart by calling out the quality of your work experience. Can you draw upon “moments” when you truly led: influenced individuals and organizations, drove results, took initiative? The more you can give color to your abilities, judgment, and demeanor, the more compelling a candidate you will be the admissions committees.
In terms of extracurricular activities, what you’ve done more recently has more weight than what you did in university/school. But, extracurricular activities need not be limited to official community service. You might also speak to your passions and interests as vehicles through which you have done good for the world. The story with the grandchildren of your housemaid could move the needle. What else have you done since university?
In terms of your list of programs, I do not see any safety schools. I think you should add some programs outside the top 7, to be safe!
