We don't see all that many people from Mexico (and neither do the AdComs), so that'll be a nice advantage for you. As for the schools you listed, Yale is a bit of a reach for you. Ross, Duke and UNC should be competitive. If I were you though I'd add maybe two more schools to your list.
As for recommendations, you might look at Anderson, Johnson, Babson, Austin.
Also, although your real goals may be general management, you might be better off going with a Non-profit or finance goal. A lot depends on your experience, and this gonna be very important for you cause you are applying with only 2 years experience, and you gotta remember that most MBA applicants have 4-5. So in those two years you need to show that you are capable.
For example I don't how big or successful your non-profit was, or how many great stories you have from your jobs, but if you can push that stuff, you should be allright.
