My recommender from a past employer recently left that past employer to become an independent consultant. He uses his personal email address. Will schools find it a problem if he submits a recommendation on my behalf from his personal email account (if he lists all the details for his current employer/client)?

I would suggest you to check with the respective schools. I think if you are able to convince them they should agree on this.
