Hi, I am currently applying to B-schools in NYC, and am re-taking the GMAT on Friday. I know that I am quite late in the process for fall 2011, and the schools I am looking at all have rolling admissions.

My question is: if I apply near the end of the deadlines for rolling admissions, am I seriously crippling my chances of getting accepted, and would I be better off applying for Spring 2012?

In other words, if applying near the deadlines for schools with rolling admissions, are most spots already filled?

It depends - are you applying full-time or part-time? What programs? Give me some more details and I can weigh in. My guess is that Spring will be more favorable, but I also assume you can just roll a ding or WL over to a spring application no problem so there might be no harm in making the late push. If you have even a remotely good reason for applying so late they aren't going to punish you out of hand.
