I think either one is fine but generally

Sleeping: a verb; describing an action (e.g. She has been sleeping for 5 hours now)

Asleep: an adverb; or describing the state of sleeping (e.g. She is sound asleep. Asleep here is an adverb modifying the adj. 'sound')
