I have several essays that have a 250 word limit, which is about 2/3 of a page in default format in MS Word.

1 page is 330 words. Do you think it's okay to write 1 full page for the essays?

Could they really mean 1 page?

There are some questions where I have more to say, but others where I have less to say. I could make 1 essay 200 words and another 300 words.

No. Go up to 10% over but no more.
