Bought Kaplan Math/Verbal Workbooks. I plan on spending about 1.5-2 weeks on each, then to the Official Guides.
I know my weaknesses (SC & DS) and plan on focusing the majority of my efforts there.

Now for my questions.

1) I know the stereotype of Kaplan tests is that they greatly underestimate your score. However I have heard they have recently changed their tests and they are much easier now. Would it be reasonable to use this as a baseline score, or should I use up one of the free GMATPrep tests for a more accurate score?
I don't know if they are easier per say, I just know that their scoring is A LOT better. You should definitely use GMATPrep as a baseline.

2) It is recommended that you keep an error log of your practice tests and other questions. However, when I downloaded some of the templates off of this website, they seemed extremely complex. Especially when it came down to dividing the questions by which concepts they tested, as many questions test multiple concepts at the same time. Any advice?
Create something more simple for yourself :)

3) Any other advice would be helpful :-D
Pick up the MGMAT quant set, and SC book if you have not already good luck!

Wow. Thanks everyone for the quick and detailed responses!

Everyone seems to mention tips on improving quant, is 36q that bad of a score?

Thanks. I have looked though that thread a few times. But at the moment I think I have enough books to keep me busy for a few weeks. I think I heard that the MGMAT books were good to really hone in on particular weaknesses. After I finish the Kaplan Math/Verbal workbooks I think I'll have a pretty good overview of specifically where those are and then get targeted books for them.
Creating my own error log might be the best bet, thanks.
