You take questions one by one, looking at explanations after each one and setting the timer for just 2 min? Or you take a bunch, like 10 questions?
My biggest worry is that for 10 questions - at the beginning of each section they are too easy, so can take me 5min to finish them, while at the end can take way above 10?

Dear imoi, I'm happy to respond.
I would strongly suggest not using the method of do one, look at the explanation, do another, look at the explanation. That is not very GMAT like. It's better to make all of your practice more GMAT like. I would say, do a batch of 10 at once, and set the timer for 17 minutes for all of them.
Yes, doing, say, #1-10 for the OG would give you all easy questions. Think of it this way --- in one practice session, do, for example, the first 10 questions with 1 in the one's place (#1, #11, #21, #31, #41, etc.) On another practice session another day, do the 2's (#2, #12, #22, #32, etc.), and continue in that pattern. You will have to be sophisticated in keeping track of exactly which questions you have and haven't done, but that way of working with give you more of a mix of difficulty levels.
