When i first started taking tests, my heart would pound sooo fast that I thought it was going to jump out of my body. The only thing that gets me over the anxiety is to just keeping taking tests. When you are in the middle of your test, focus on the question in front of you. Not the previous question, or what if you do bad or what is the next question going to be l BUT ONLY the question in front of you. I got this advice from someone close to me and it really works! In addition, the more tests you take the less anxiety you should feel every time.
I think i've gotten over my anxiety now but i'm still trying to improve my scores.

P.S. have you taken any gmat prep tests or just kaplan only?

If you cancel your test now you forfeit the money you paid for it so you should just go take the test. Have some confidence and you may surprise yourself.

Yah, I've also noticed that darn timer really sets my anxiety off and so I feel rushed and panicked. Turning the timer off on a couple practice tests (at least for the first 10 q's) seemed to reduce my anxiety significantly to where I got much more of them correct the first time through.

Oh and yes, i took one of the gmatprep tests...I seemed to do slightly better on it, but I didn't take my numbers down to find a score...couldn't figure out where to find my score from them and accidentally reset my test. :-/
