what to specialize in?

I'm currently preparing for GMAT and while reviewing the different types of specialization, I'm curious as to what I should specialize in when I do get in.
background:
-BA in math, but terrible GPA(below 3.0)
-currently working as a insurance claims supervisor in a call center.
I probably will not go to a top 20 school, but I do plan to go a local university with a decent MBA program.
my main concern is to find something that will complement my background, but at the same time, give me job security, well pay, and upward mobility.
since I did math, my first thought was to go into finance, however as I stated before, my gpa in mathematics was terrible, and I do not have any finance background. Wont a company prefer someone with an undergrad in finance more then me?
my second thought is risk management as I'm involved in insurance. How's this for a career outlook in general? Is this something that is always 'in demand.'
Other specializations to consider:
energy
MIS
supply chain management/marketing.
It's impossible to tell what is going to be 'in demand' and is a smart choice for an MBA, but just wanted to get your thoughts.
