BB..please clarify..when you say you can check out one of our tests..M/V...are you referring to GM Challenges?

I am under the assumption these challenges are just collections of hard questions, not something one should use as a simulated test....

GMAT Club Tests are not collections of questions.
These tests are assembled as tests and split by category (math and verbal) to help focus on each of the areas. Each test has a composition of what one would find in a typical test (arithmetic, geometry, stats, probability, etc). They are timed as a test, though untimed mode can be set, have the same question format, and produce a percentile-based score.

Currently they are not adaptive, but there are definitely plans to make them so soon.

for Quants, I have read in one debrief that 800score is good

In my opinion, 800score was good for timing, really good for timing in fact. I didn't think the content was that representative, but I think their scores trend low (ie my gmatpreps were higher than 800 score).
