I think you're targeting the right range - it seems you have a good feel for what may be stretches (Stanford/Wharton), sweet spots (Columbia/Booth/Tuck) and safeties (Haas/NYU) -- although Haas and NYU aren't true safeties (as they are actually quite hard to get into relative to schools with a comparable rep such as Darden, Duke, Michigan, Cornell, UCLA and Yale).
You have solid work experience, so it really comes down to strong execution on the applications, and hoping for some luck on your side. And no, there's really no point in retaking the GMAT unless you are absolutely confident you can score 740+ easily (and ideally 760+) for it to be worth it.
