Make sure you mention all those informal leadership roles at work in your essays. They do count. The work in Bangladesh won't help to show that you have strong extracurricular leadership, but you should mention those activities in your application. As for the fundraising, do it if it's a cause you support. In terms of improving your B-school profile, the best extracurricular activities are those in which you lead other people or have a directing role in the organization's activities (e.g., sitting on the organization's board). Yes, you should let them know how many hours you had to work during your studies.
