Over the time I've been with GMAT Club I have seen many people set themselves up for failure when booking a test b/c of the time or day they choose. You should choose a time when you find that you are the most productive throughout the day. FOr some people this is early, others this is later. You should also choose what days you are most productive, for example a weekend may be a bad idea. I took my test on a Monday and took the day off of work b/c I found that I'm most productive on mondays, and i got the whole weekend leading up to it to relax and unwind. Also, what time do you take your practice tests? You should do your best to atleast take practice tests at the same time of day of your real test, and simulate the testing environment as much as possible. So know exactly what you will eat, how much you will drink, how long the breaks are, what day it is, what time it is, etc... Don't underestimate the power of managing every controlable variable of this test. You can control EVERYTHING except for the questions that come at you on test day... It is your job to learn and practice the intangibles and factors that you can control. Read my article called "10 tips..." in my signature, I touch on a lot of these topics. Good luck
