You might be able to spend a quarter in Spain through the IBEP, and some of those have the option to do language study concurrently. Depending on what flavor of Spanish you're after, you could live in the Pilsen neighborhood for a real immersion experience.
Thanks for input. I'm not looking for anything fancy - I just thought that if I have 2 years I could pick up Spanish (business level).
Now, as for housing... by far my preference is to bond with Boothies. Actually, I forgot to put in on my list above, but my key concern re Booth is "loose community" (flex curriculum, "commuting" reputation, no cohorts). I really want my MBA to be as much about education as about friendships for life and fun. So that's why I asked about campus housing - I thought this is great way (albeit, one of many) to bond. If everybody lives "somewhere" but not together, then it only adds to my "loose community" points.
So I'd not chose to immerse myself into Spanish community so deeply if the price for this would be bonding with Boothies.
