Idiom is "interested in [doing something]"
"in" is required in both clauses to maintain proper idiom and is in no way redundant.

Venture researchers are <<interested in tracking information regarding all aspects of the venture creation process as well as in capturing data that demonstrate >> the economic value of venture capital to the national and global economies.

I chose C.
Is "data" supposed to be regarded as plural form?
Plese let me know, thank you!
