ZacharyCorOf course if you do some online courses that is a plus, but don't expect wonders.
Difference is the same as online degree vs. traditional one.
If you can do some masters program related to math or stat field, that would be great, in that 2 years time frame period that you have.
If not, go for online classes, at least you show initiative and that counts.
Just beware that compared to somebody who has undergrad or master training in math/stat you lack in eyes of admission committee, that's all.
