ones as a referrent has been appearing so many times in GMAC.

I replace one or ones with the proper referent. Here the referent is principles.
So D become --> principles to control the body orientation of
& E become --> principles used in controlling the body orientation of

I agree D doesn't fit in but E after replacing the referrant(principles) looks better and clearer than C to me.

physical principles cannot be "USED" to control body orientations
principles can be "USED" to explain an anomaly but not to control body orientations
maybe a physical object like a pole/rope can be "USED" to control body orientations
"used" makes the sentence construction awkward.

But in C: Those refers to Physical principles, which means that "Physical principles are controlling the body orientation".

Isn't this contradictory??

Those cannot refer to gyrations logically. When we replace those with gyrations, the comparison turns faulty since we are comparing abstract things such as with physical movements as gyrations

This sentence need to be correct in terms of parallel construction.
The underlying physical principles that control the midair gyrations of divers and gymnasts are the same ...

There are 2 types of principles shown in the questions-
1. principles that control the midair gyrations of divers and gymnasts. (call principles X)
2. principles that control astronauts in a weightless environment. (principles Y)

Correct comparison is Principles X are same as principles Y So, Underlined part should represent principles. We can easily eliminate all options except C.
