Can they take back the admissions decision if once they receive official transcripts they see that I have become a economics minor?

There is soo many things wrong with this statement. You are doing better in Engineering then Economics??? You're gonna drop your 2nd major on your last quarter?? Are you serious? are you on crack?
But in all seriousness, I would believe there is a high chance that they can pull your offer, since 1) if you do notify them, you are telling them that you're basicly doing poorly in class the last quarter before matriculation, reason to question your ability in bschool. 2) if you don't notify them, when they recieve your transcipts they will think you lied.
I would just finish your classes. Even if you pull of the lowest passing grade, it will still give you a double major on your degree and going into Bschool will wash away the affect of your bad grades.
