The deferred MBA programs look for well-rounded and exceptional applicants. These programs are now being offered by more schools including Yale, Stern, and also Darden, MIT and Columbia too. It sounds like you've demonstrated lots of leadership potential through starting a non-profit and other school actitivites too. You have some impressive accomplishments! Your interest in the arts is quite interesting too, especially for an engineering student, and should help your story stand out.
From an academic perspective, it seems like you're on a great track with your GPA - keep it up! (By the way, the undergrad GPA will be all that matters when you apply, not 10th/12th). GMAT is an important indicator of your academic strengths too, and if you have a bit of time before you plan to apply, I would try again and see if you can maximize that side of your application.
