The problem with my application is my academics are the weakest link. I studied economics at the University of Sheffield (top 15 school in the UK) but I doubt anyone outside of Europe has heard of it. I got a 2.1 - which is broadly comparable to a 3.5 GPA. My current GMAT score is 660 (high verbal, moderate math - can't remember the exact scores!) - but I will retake it.
The rationale:
-Strengthen my academics by putting a university that an American audience will have heard of
-Counteract my current low GMAT quant score by taking a numerical course
-Show willing and proactively by taking a course to fill in my gaps/prepare me for b-school / private equity afterwards
Please let me know if the rationale makes sense and if you think a summer school is a good idea!

If it's going to quite a bit in fees and lost earnings, I wouldn't do it personally.
B-school applicants typically take courses after undergraduate studies to bolster their sub-par grades from the undergraduate studies --- you seem to have a decent GPA so I don't much see a value.
I would advise you to Keep your current job while preparing for GMAT and break 700(seems to be the benchmark for many programs).
